UNS – Research on the potential of omega-3-enriched meat and eggs has propelled Prof. Ir. Lilik Retna Kartikasari, M.P., M.Agr.Sc., Ph.D., IPU., ASEAN Eng., to become the latest Professor at Universitas Sebelas Maret (UNS) Surakarta. Her inauguration took place during the UNS Academic Senate Open Session at the G.P.H. Haryo Mataram Auditorium on Thursday (19/12/2024). Prof. Lilik is the seventh professor in the Faculty of Animal Husbandry (Fapet) and the 324th at UNS.

Prof. Lilik was inaugurated as a professor in the field of Animal Product Technology. Her inaugural address, titled “The Potential of Omega-3 Meat and Eggs as Sustainable Functional Foods”, provided insights and recommendations for producing functional foods with optimal nutritional value.

In her speech, Prof. Lilik emphasized the critical role of functional foods in supporting Indonesia’s government policies, particularly in achieving the Sustainable Development Goals (SDGs). She highlighted livestock products, such as meat and eggs, as essential functional food sources.

Advances in animal feed technology now enable the production of meat and eggs with enhanced nutritional profiles. These products can contain higher levels of omega-3 polyunsaturated fatty acids, which not only improve their nutritional value but also have the potential to reduce cholesterol levels.

The Dean of the Faculty of Animal Husbandry elaborated on methods to produce omega-3-enriched eggs. She explained that such enrichment could be achieved by formulating chicken feed with ingredients rich in omega-3 fatty acids. Marine-based feed components, such as fish meal and fish oil, can boost levels of long-chain omega-3 polyunsaturated fatty acids (PUFA), including EPA and DHA, in chicken eggs and meat.

However, Prof. Lilik noted that using marine-based feed ingredients often results in a “fishy” aroma and flavor. To maintain product quality and sensory appeal, she recommended limiting fish oil supplementation in poultry feed to a maximum of 1,5%.

As an alternative, she proposed plant-based omega-3 feed supplements, which preserve the sensory properties of the products. Plant sources such as flaxseed oil, chia seeds, and canola are rich in omega-3 alpha-linolenic acid (ALA) and can serve as sustainable feed additives. However, optimizing the ratio of linoleic acid (LA) to alpha-linolenic acid (ALA) in feed formulations is crucial to maximizing omega-3 accumulation in eggs and meat.

“In broiler chickens of the Cobb strain fed with a diet containing 6% ALA, the total omega-3 PUFA in breast meat reached 338 mg per 100 grams. This finding demonstrates that chickens fed ALA-enriched diets can produce eggs and meat that meet the minimum labeling requirements for omega-3 PUFA sources, 300 mg per egg or 300 mg per 100 grams of meat. These products are also sensory-acceptable to consumers,” Prof. Lilik explained.

The development of functional foods rich in omega-3 PUFA also offers the potential to reduce cholesterol levels in eggs and meat, making it a significant strategy for improving public health. Prof. Lilik’s innovations aim to provide sustainable alternative omega-3 sources and address the nutritional needs of the community.

The Chair of the UNS Board of Professors, Prof. Drs. Suranto Tjiptowibisono, M.Sc., Ph.D., praised the focus on sustainable functional food development. “We are learning how to consume healthier foods with the role of omega-3 in lowering cholesterol levels in both eggs and meat. This is an excellent effort to achieve sustainable functional food production,” Prof. Suranto said.

With Prof. Lilik’s expertise, UNS contributes to advancing education quality while directly supporting several SDG targets, particularly Goal 4 on quality education. Humas UNS

UNS Rector, Prof. Dr. Hartono, dr., M.Si., conveyed a message to the students, highlighting that KKN is a vital implementation of the Tridarma Perguruan Tinggi (Three Pillars of Higher Education), specifically in community service. This program is expected to provide invaluable experiences in character development, leadership, and social skills.

“Through KKN, students are not only expected to apply the knowledge they have gained in class but also to learn from the social and cultural dynamics of the communities they serve,” Prof. Hartono said.

He emphasized the importance of carrying out responsibilities with creativity, innovation, and a sense of accountability. Students were encouraged to build good relationships with local communities, respect their traditions and cultures, and become agents of positive change in their respective areas.

“They will be deployed across seven provinces, from central to eastern Indonesia, carrying programs designed to address the specific needs of the communities,” he added.

KKN is one of the ways that UNS contributes to community service. The program activities can encompass various aspects of the Sustainable Development Goals (SDGs), depending on the types of initiatives carried out. KKN UNS program aims to address social, economic, and environmental challenges in the participating regions, making a tangible contribution to sustainable development.

The fourth speaker, Dr. Ir. Ayu Intan Sari, S.Pt., M.Sc., a lecturer at the Socio-Economic Livestock Laboratory, Faculty of Animal Science UNS, and a board member of Persepsi Solo Raya Chapter, presented a paper titled “Gastronomic Diplomacy Strategies to Enhance the Image and Promote the Diversity of Indonesian Culinary and Tourism on the Global Stage.”

The participants of the 1st Indonesian Gastronomy Conference (KGI) 2024 included representatives and invitees from various institutions such as the Ministry of Foreign Affairs, the Food Security and Agriculture Office of Surakarta, the Culture and Tourism Office of Salatiga, the Library and Archives Office of Berau Regency in East Kalimantan, Universitas Gadjah Mada, IAIN Metro Lampung, Universitas Bangka Belitung, Universitas Bhayangkara Jakarta Raya, Ma’had Aisyah Binti Abu Bakar Library in Bogor, Bogor Agricultural Institute, SMAN 4 Yogyakarta, SMPN 1 Tangen Sragen, as well as students, researchers, and observers of Indonesian gastronomy.

Achmad Nur Chamdi, S.Pt., M.Si., the Chairman of the organizing committee, stated that the 1st Indonesian Gastronomy Conference (KGI) 2024 resulted in several key recommendations and decisions. First, the declaration of the establishment of the Indonesian Gastronomy Forum, with leadership for the 2025-2029 term, which will be inaugurated at next year’s conference. Second, it was emphasized that gastronomy has been an integral part of Indonesian society for hundreds of years. Gastronomy, closely related to culinary arts, differs from the concept of cuisine, which refers to the art of cooking healthy and nutritious food. Gastronomy, however, encompasses a broader scope, including the arts, philosophy, culture, and the practices and studies related to the selection, preparation, production, presentation, and enjoyment of food and beverages. Indonesia boasts a rich variety of culinary and gastronomic traditions, and when well-managed, both can have a profound impact, even contributing to the welfare of the Indonesian people.

Gastronomy is a highly strategic soft power for Indonesia, supporting both the economy and food security. It can help address various national issues through culinary diplomacy and contribute to environmental preservation and mitigating the impacts of climate change. Additionally, discussions on gastronomy are part of efforts to support sustainable development, particularly in line with the implementation of Sustainable Development Goals (SDGs), especially points 2, 3, 14, 15, 16, and 17. Regarding the 2nd Indonesian Gastronomy Conference (KGI) in 2025, since no region has agreed to host the upcoming conference, the event will still be held in Surakarta, Central Java.
