UNS — Business plan for snack bar from ikan kembung (Rastrelliger) developed by Universitas Sebelas Maret (UNS) Surakarta student successfully won 2nd place in the Marine and Fisheries Business Model Canvas Competition 2021 held by Student Association in Fishery Products Technology (Himasilkan) IPB.

Tim Kembung as UNS representative consists of Naya Nulina Citawara from Food Technology Program, Nimas Suci Kusuma and Indah Khoirunnisa from Agribusiness program. To uns.ac.id, Naya, as the Team Leader, explained that their business paper titled “FishBar – Snack bar Ikan Kembung as Diversification of Local Fishery Product with Rich Benefits” was selected because of the rich fishery potential in Indonesia, including ikan kembung.

They observed that the potential of ikan kembung has not been developed fully, although the fish is relatively low priced. The literature review also showed that ikan kembung has a nutritional benefit that is almost equal to salmon. Ikan kembung also has authentic values for Indonesian people.

“This means that local fishery can be developed into a product, packaged practically, with low price, economical, and healthy nutritional value,” Naya said on Friday (31/12/2021).

Their product also offered various uniqueness and superior quality. The product is developed from local ingredients that minimize imported products such as wheat and oats. The ingredients of ikan kembung snack bar are, among others, ikan kembung, koro beans, honey, and cinnamon powder. In terms of taste, the prototype was prepared with a delicious taste. The product is practical and friendly for all ages, with low calories and high nutritional values that could meet the nutritional needs of adults.

Besides innovating with the method to maintain the taste and nutrition of the fish while eliminating its smell, the Team also analyzed the competition for their product in the market. Their product offered a locality value which makes them superior in terms of production cost and ingredient availability.

With this achievement, the Team admitted that they were grateful and delighted that their hard work paid off with 2nd place at the national level. The Team also hoped that their innovation could be developed further.
