The Student of UNS Utilized Eggshells to Design High Calcium Cooking Seasoning

UNS — A Team of Student Creativity Program for Entrepreneurship (PKM-K) UNS from the Animal Husbandry Program Faculty of Agriculture (FP) designed high calcium cooking seasoning by utilizing eggshells. Their product was named BUCATUR: Bumbu Masak High Calcium (High Calcium Cooking Seasoning). The team was led by David Anggara Putra and Farhan Sabilla Rosyad, and Slamet Prihatin as members, all of them are students of the Animal Husbandry Program 2018. They were supervised by Dr.agr. Muhammad Cahyadi, S.Pt., M.Biotech.

David Anggara Putra stated that eggshells are animal husbandry wastes that are rarely utilized. The number of egg consumption increases from year to year, contributing to the increase in the number of eggshells waste. “The piled-up eggshells will have a negative effect on the environment. This is the basis that gave us the idea to process eggshell wastes into a component of high calcium cooking seasoning,” David explained, Wednesday (2/12/2020).

He added that eggshells contain 90% calcium carbonate, 1% magnesium carbonate, 1% calcium phosphate, and 4% protein. The high calcium content has the potential to be used as calcium fortification material for food products. BUCATUR is made from selected original Indonesian spices with calcium fortification from 5% eggshell extract. Unlike cooking seasoning in the market, BUCATUR contains 280 mg of calcium in each sachet (14 g); therefore, the consumer will always get high calcium cooking seasoning. BUCATUR offered a product with 280 mg calcium per sachet, which equals 28% of adult calcium needs.

“Cooking seasoning plays an important role in household life. Almost all housewives and restaurant or hotel cooks also use seasoning to improve their food taste. Especially for housewives who provide foods for family members, natural seasoning with calcium fortification will become a promising option,” David said.

David added that the high calcium content in BUCATUR product can be used as a source of calcium for the growth of bones and teeth of children and to maintain adequate calcium supply for adults. The supervising Faculty Member, Dr.agr. Muhammad Cahyadi, S.Pt., M.Biotech stated that the PKM-K funded by the Directorate General of Learning and Student Affairs (Ditjen Belmawa) Ministry of Education and Culture (Kemendikbud) of the Republic of Indonesia (RI), is an appropriate program for university students to learn how to start entrepreneurship. “PKM-K demands students to be innovative and creative in creating market opportunity so that the product they offered can gain profit. Besides that, new entrepreneurs will provide job opportunities in the future,” he stated.

BUCATUR product is planned to have various variants of taste and packaging. This seasoning will be produced in 14 gr sachet with chicken and beef option in the first stage. The price is set at IDR 1,000 per sachet; thus, it will be able to compete with other products in the market. The team has designed various packaging and volume as a future marketing strategy.
